The last quarter of an hour, and then the seventy-two hours that follow it. The settle, the goodbye, whatever was offered on the way out, and whether anything arrived afterwards.

Three days later a guest is asked what they remember, unprompted. What survives that gap is what the establishment is actually known for — and it is very often not the thing the establishment has been working hardest on.
